Raclette is an Alpine comfort food for cold, wintry nights. We heat half wheels of Raclette under traditional Swiss warmers, and scrape the melted cheese onto boiled new potatoes, toasted baguette, and frankfurters. Baked cheese is specifically made to be served warm, so when heated, it caramelizes and softens, becoming crispy and sweet on the outside, rich and buttery on the inside, but does not melt or lose its shape.
